Time for Sunday Football, peacoats, hot cocoa and my favorite…Pumpkin! Pumpkin bread, pumpkin cheesecake, pumpkin spice lattes, etc. Last weekend we made Mini Pumpkin Cheesecakes using Paula Deen’s Pumpkin Cheesecake recipe and cupcake tins. Hit a few snags; the first batch had a soft crust and stuck a little to the sides, the second batch had a crispier crust but still stuck to the sides (even after Pam!), and the third we ran out of graham cracker crumbs so we just baked them in mini cupcake tins. Honestly, crust or no, these are still delicious! Note: Paula’s recipe will make 24 large and 30+ mini cheesecakes. Bake the large cupcakes for 30 mins per pan, the mini 20-25mins per pan.
